Recipe: Dill Fridge Pickles for One.

dill fridge pickles for one / from: belongwithwildflowers.com

It all started pretty innocently. Before I knew what I was getting myself into, I nodded yes when asked if I’d like to try fried pickles in Indiana. Since the first bite, I’ve been thrown head-first into pickle mania. I swear, it’s like I can’t stop myself – I’m eating pickles around the clock.

Much to my delight, my garden is happily providing organic cucumbers for me to make my own pickles at home. But, organic gardening can be finicky (especially for a newbie). While my plants are developing delicious cukes, they also are only spitting out one or two at a time.

Enter the world of dill fridge pickles for one! Who needs to drag out all their equipment for canning? Not us. Who needs to stand in the kitchen for hours making large batches of pickles? Not us. Feast your eyes on these simple pickles that taste heavenly and take about five minutes to make.

Dill Fridge Pickles for One
Yields: 1 pint jar (16 oz.)

Ingredients:
– 1/3 of a bunch of dill
– 1-2 garlic cloves, crushed
– 1 cucumber
– 1 cup water
– 2 Tbsp. vinegar
– 2 tsp. pickling or kosher salt*

Directions:
1. In a pint jar, add dill and crushed garlic to the bottom.
2. Slice your cucumber into spears, slices, or whatever shape you’d like. Throw cucumber in pint jar on top of dill and garlic.
3. Mix together water, vinegar, and salt until the salt has dissolved. Pour this brine over your cucumbers.
4. Add some dill to the top of your jar, if desired.
5. Refrigerate for 36-48 hours, and enjoy!

* If you don’t use pickling or kosher salt, the liquid may turn cloudy or discolored. You can use more or less salt as you’d like for taste. I originally made pickles with 1 Tbsp. of pickling salt + it was way too salty. Don’t be afraid to adjust any ingredients and make it yours!

I want to try making fridge pickles! I don’t have all the supplies for canning, or space to store them. But I love pickles- and fried pickles are even more amazing!

    • http://belongwithwildflowers.com/ Caitlin

Definitely try making these! I actually made my last batch while my stepfather renovated the kitchen — you literally only need a tiny bit of counter space, a can, and you’re set!

PS – I think I should start a Fried Pickle Society. I am amazed by how many fried pickle lovers there are out there. I’ve been missing out on this life treasure until recently!

    They look great!

Thanks Steph! They are pretty damn tasty.

I always want to make pickles but never want to bother with the canning process. I love this simple method. Thanks for sharing and good luck with your organic gardening!

    • http://belongwithwildflowers.com/ Caitlin

I hear you, Megan — it’s the same reason why I’ve stayed away from canning pickles! Sometimes it’s just not worth the effort to drag out all the equipment + get everything started. Thanks for the well wishes!

Ok yum!!!!! Love me some good homemade pickles!

    • http://belongwithwildflowers.com/ Caitlin

They are seriously so addicting! If you make them, I hope you enjoy them!

  • http://praylivecreate.com Stephanie Oh

Okay, seriously adding pickle making to my goals in life. I never buy pickles for some reason, but this has me craving them! My husband and I are going to try making our own kimchi and I think we’re going to have to grab some cucumbers while we’re at it :)

    • http://belongwithwildflowers.com/ Caitlin

Yes, definitely add pickle making to the life list! After I made my first batch and saw how easy it was, I haven’t been able to stop. We have about 8 cans of pickles in the fridge right now… I better get snacking! And yum, enjoy your own kimchi!

  • http://www.capturedinthelens.com/ Stephanie

Oh delicious! I love pickles. :)

    • http://belongwithwildflowers.com/ Caitlin

      They are so addicting, right?!

  • http://www.theladyokieblog.com/ Amanda

Ah! I had no idea you could do this. I WANT. Seriously, I love pickles. And aren’t fried pickles just the best thing ever? Thank you, Oklahoma, for your various assortments of fried foods. This looks so easy and delicious!

    • http://belongwithwildflowers.com/ Caitlin

Definitely, definitely make these bad boys! So easy + so delicious. I am seriously considering a 12-step program for my pickle problem at this point… but if loving pickles is wrong, I don’t think I want to be right.

In Massachusetts, people aren’t big on fried food, so I was amazed when I went to Indiana. They even had fried twinkies… what the what?! That’s funny to hear OK is the same way! It must be a Midwestern thing :)

so perfect and simple!! love it.

Thanks Allie! I’ve been trying to only use recipes that require 10 ingredients or less for more “clean eats” :)

  • http://writemeg.com/ Meg

Excellent idea! I’m a pickle fanatic on a good day, and Spence and I have talked about making our own . . . but I’d always assumed it was complicated (and anyway, pickles are cheap!). But I love an idea of fridge pickles and the fact that I don’t have to wait forever to enjoy them, haha . . . will have to try this!

    • http://belongwithwildflowers.com/ Caitlin

Meg, I stayed away from making my own pickles for years because I thought it was too complicated too! Imagine my surprise when I heard about fridge pickles a few months back. I’ve been eagerly awaiting the cucumbers in my garden for this recipe, and it was so worth the wait! If you try them, I hope you enjoy them :)

  • Staci@LifeAtCobbleHillFarm

Great idea!! Although, did you know you don’t actually have to “can” in order to “can” pickles? Nope – they don’t actually need processing. :)

    • http://belongwithwildflowers.com/ Caitlin

That’s what I love about this recipe — no processing to “can” the pickles! I’ve heard that water bath canned pickles sometimes are lacking a crunch. Have you ever made pickles in the water bath canner?

  • http://www.jaggersmom.blogspot.com Megan

I want to try this!! I love pickles….one of my favorite things!

    • http://belongwithwildflowers.com/ Caitlin

I hope you have fun if you try it out… it’s so quick + delicious! Thanks for stopping by :)

just the title of this post made me happy – i love all types of pickles :) last summer, my brother-in-law gave me 20 cucumbers from his garden, and i was knees deep in pickles all summer :)

Yay for fellow pickle lovers! That is such an excellent gift from your brother… you can’t beat year-round garden fresh pickles :)

Fried pickles are big in the South, but I much prefer your version!

    • http://belongwithwildflowers.com/ Caitlin

Thanks Jenna! I’m glad I don’t live in the South because I would have no restraint in buying + eating fried pickles… daily, haha.

  • http://tshirtjeans.blogspot.com/ Nicki

Yes, and yes! I will take refrigerator pickles over the work of canning any day. We LOVE these, and your recipe is simpler than the one I’ve used. Will give these a try! Thanks for sharing.

    • http://belongwithwildflowers.com/ Caitlin

So glad to have offered up a new version of this recipe for you, Nicki! If you do end up making them, I hope you love them :) I was really surprised how tasty + crispy the fridge pickles are.

I thought that I’d never be able to use all the cukes we’ve been getting from our plants this year, but Grace has been eating them by the jarful. So far our 8 plants have yielded us more than 130 cucumbers but it will have to be even more if I want pickles until next year — at least with the way we’re going through them. The daily harvest has gone down considerably so I’m going to have to try your recipe.

    • http://belongwithwildflowers.com/ Caitlin

Holy moly, 130 cucumbers?! That’s amazing! If you try this recipe, I hope you like it :) It’s nice + simple, and the pickles have a good crispness.

  • http://jaybirdblog.com/ Alicia | Jaybird Blog

Oh yum! My friend and her boyfriend had a night awhile back where they made about eight different types of fridge pickles with all kinds of mixes of ingredients. I’ve only every made and canned pickles in big batches, but I’d love to try this smaller size!

    • http://belongwithwildflowers.com/ Caitlin

Oooh, a pickle making night? I like the sound of that. I love canning big batches of pickles, but with my garden going through so many ups-and-downs this year, she’s being feisty + only spitting out a cucumber or two at a time. The nerve! Haha.

  • Patricia

This is a wonderful idea. I am so glad you shared it with us. I like the photos as well.

    • http://belongwithwildflowers.com/ Caitlin

Thanks Patricia! I’m so glad you enjoyed this recipe :)

  • http://belongwithwildflowers.com/ Caitlin

Pickled watermelon?! Now that sounds amazing! I love pickled carrots + cauliflower… so, so good.

  • Laurie

This is fantastic Caitlin!! What a quick and wonderful way to make pickles. Cutting back on the garden this year I only have one cucumber plant and it too is producing only one to two at a time. Now I know why! So I can make these pickles. :)

Thank you also for joining in on the Country Fair Blog Party!! So excited to have you join us! I can’t wait to hear how many try this recipe.
